Lockdown recipes we love

These are challenging times we’re living in. As an extended lockdown keeps us further from the ones we love, we need to do all we can to stay close to one another. So much has changed, and family mealtimes and special occasions have too. Easter was a quieter affair than years gone by as video calls replaced hugs, gatherings and quality time.

For a little while longer, we’ll all be staying home but getting into the kitchen can help bring us closer together. We all have those dishes that remind us of someone special. Those family classics that evoke memories and feelings of comfort. From oat crunchies to savoury muffins, these tried and tested favourites will warm your stomach and your heart.

Oat Crunchies

There’s nothing better than the smell of crunchies baking in the oven.

1 cup of cake flour
1 cup of sugar
1 cup of oats
1 cup of desiccated coconut
125g of butter (or margarine)
2 tablespoons of golden syrup (or honey)
1 tablespoon of water
1 teaspoon of bicarbonate of soda

1) Preheat your oven to 160 degrees Celsius and grease a square baking tin or oven dish.
2) Mix the flour, sugar, oats and coconut together and set aside.
3) In a small pot on the stove, melt the butter, syrup and water together. Add the bicarb and mix in until foaming well.
4) Add this to the dry ingredients and mix until evenly distributed.
5) Press into the greased dish and bake for 25-30 minutes or until lovely and golden brown.
6) Remove from the oven and cut into squares whilst still warm.
7) Feeling indulgent? Drizzle some melted chocolate over the crunchies once they’ve cooled.

Spinach & Cheese Muffins

Perfect for those who like their treats a little more savoury…

2 cups of cake flour
2 teaspoons of baking powder (skip this if you’re using self-raising flour)
1 beaten egg
1/3 cup of softened butter (or sunflower oil)
½ cup of milk (plus extra in case you need to thin the batter a bit more)
½ cup of plain yoghurt (or buttermilk)
½ teaspoon of paprika
A pinch of salt
A generous grind of pepper
½ cup of grated cheese (plus a little extra for topping before baking)
½ an onion chopped
1 cup of spinach

*Other delicious add-ins for these muffins include corn kernels, feta cheese and roasted butternut. Use whatever you have so that nothing goes to waste at home.

1) Preheat your oven to 180 degrees Celsius and grease a 12-cup muffin tin.
2) Fry your onion and spinach until cooked and the spinach is wilted. Set aside.
3) Mix all of the other ingredients together to form a batter. Loosen with more milk if need be.
4) Add the spinach and onion mix.
5) Spoon into muffin tray hollows and top with the leftover grated cheese.
6) Bake for 25 minutes or until a skewer comes out clean.
